cheesecake parfaits

Ingredients:
- Cheesecake Filling:
- 8 oz fat-free cream cheese, softened
- 1/2 cup non-fat Greek yogurt
- 1/4 cup powdered sugar substitute (adjust to taste)
- 1 teaspoon vanilla extract
- Zest of one lemon (optional for added flavor)
- Graham Cracker Crust:
- 1 cup crushed graham crackers (use a reduced-fat version if available)
- 2 tablespoons melted butter or a butter substitute
- 1 tablespoon powdered sugar substitute
- Toppings:
- Fresh berries (strawberries, blueberries, raspberries) for garnish
- Mint leaves for garnish (optional)
Instructions:
- Prepare Graham Cracker Crust:
- In a bowl, combine crushed graham crackers, melted butter, and powdered sugar substitute. Mix until the crumbs are coated evenly.
- Make Cheesecake Filling:
- In a separate bowl, beat together softened cream cheese, Greek yogurt, powdered sugar substitute, vanilla extract, and lemon zest until smooth and well combined.
- Assemble the Parfaits:
- In serving glasses or bowls, layer the graham cracker crust, followed by a layer of the cheesecake filling, and repeat as desired.
- Chill:
- Place the parfaits in the refrigerator to chill for at least 1-2 hours, allowing the flavors to meld.
- Garnish:
- Before serving, top the parfaits with fresh berries and mint leaves for a refreshing touch.
