cheesecake parfaits

Ingredients:

  • Cheesecake Filling:
    • 8 oz fat-free cream cheese, softened
    • 1/2 cup non-fat Greek yogurt
    • 1/4 cup powdered sugar substitute (adjust to taste)
    • 1 teaspoon vanilla extract
    • Zest of one lemon (optional for added flavor)
  • Graham Cracker Crust:
    • 1 cup crushed graham crackers (use a reduced-fat version if available)
    • 2 tablespoons melted butter or a butter substitute
    • 1 tablespoon powdered sugar substitute
  • Toppings:
    • Fresh berries (strawberries, blueberries, raspberries) for garnish
    • Mint leaves for garnish (optional)

Instructions:

  1. Prepare Graham Cracker Crust:
    • In a bowl, combine crushed graham crackers, melted butter, and powdered sugar substitute. Mix until the crumbs are coated evenly.
  2. Make Cheesecake Filling:
    • In a separate bowl, beat together softened cream cheese, Greek yogurt, powdered sugar substitute, vanilla extract, and lemon zest until smooth and well combined.
  3. Assemble the Parfaits:
    • In serving glasses or bowls, layer the graham cracker crust, followed by a layer of the cheesecake filling, and repeat as desired.
  4. Chill:
    • Place the parfaits in the refrigerator to chill for at least 1-2 hours, allowing the flavors to meld.
  5. Garnish:
    • Before serving, top the parfaits with fresh berries and mint leaves for a refreshing touch.
