Cauliflower Pancakes

Ingredients:
- 2 cups cauliflower, grated or riced
- 2 large eggs
- 1/4 cup all-purpose flour (or almond flour for gluten-free)
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions (optional)
- 1/4 tsp garlic powder
- Salt and pepper, to taste
- Olive oil or butter, for frying

Instructions:
- Prepare the Cauliflower:
- If using fresh cauliflower, grate it finely or pulse in a food processor until riced.
- Steam or microwave the cauliflower for 3-4 minutes to soften. Allow it to cool slightly, then squeeze out excess moisture using a clean kitchen towel.
- Mix the Batter:
- In a large mixing bowl, combine the cooked cauliflower, eggs, flour, Parmesan cheese, green onions (if using), garlic powder, salt, and pepper. Mix until well incorporated.
- Form the Pancakes:
- Scoop about 2 tablespoons of the mixture and shape into small pancake-sized patties.
- Cook the Pancakes:
- Heat a skillet or griddle over medium heat and add a little olive oil or butter.
- Place the cauliflower patties on the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy.
- Serve:
- Serve warm with sour cream, Greek yogurt, or your favorite dipping sauce. These also pair well with a fresh salad or as a side dish.
