Cashew(or quinoa) thumbprint bites

Ingredients
12 large ,medjool dates, pitted
1 cup of cashews or uncooked quinoa (I did 2 batches using one of each)
Pinch of seasalt(optional)
1/2 cup of dark chocolate chips
Add nuts or quinoa and dates in a food processor and blend until smooth
Roll into a bite size balls and pop into a mini muffin tray
Place a small well in the middle of the ball using your thumb or a kitchen utensil
Pour a spoonful of melted chocolate in each one. Refrigerate until chocolate has hardened then, enjoy!
