Carrot Cake Greek Yogurt Scones

12g protein per scone. This makes 6 scones.

Ingredients

  • 1 cup (120g) whole wheat flour
  • 1/2 cup (60g) oat flour (or almond flour for extra protein)
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tbsp coconut sugar (or brown sugar)
  • 1/4 cup (60g) Greek yogurt (plain, full-fat or low-fat)
  • 1/4 cup (60ml) milk (dairy or unsweetened almond)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup finely grated carrot (~1 medium carrot)
  • 2 tbsp chopped walnuts or pecans (optional)
  • 2 tbsp raisins or chopped dates (optional)
  • 2 tbsp vanilla or unflavored protein powder (whey, pea, or soy; optional but helps reach 12g protein)

  2. Dry Ingredients: In a large bowl, mix the flours, baking powder, baking soda, salt, cinnamon, nutmeg, sugar, and protein powder.
