Buffalo Chicken Pinwheels

Ingredients

  •             3 cups of shredded Chicken, I use a rotisserie Chicken
  •             ⅓ cup chopped green onion
  •             ¼ tsp garlic powder
  •             ¼ tsp salt
  •             1 cup Colby Jack Cheese, shredded
  •             ½ cup Bleu Cheese, crumbled
  •             5 ounces, (more or less to taste) Frank’s Red Hot Sauce
  •             8 ounces Cream Cheese, at room temperature
  •             5 or 6 large flour tortillas

Instructions

FIRST STEP:

In a medium sized bowl, shred the chicken and place it in the bowl

Sprinkle the chicken with the salt and the garlic powder

SECOND STEP:

Add in the cream cheese, and the Red Hot sauce and stir to combine

Stir in the Colby Jack shredded cheese

Toss in the chopped green onions and stir to combine well

THIRD STEP:

Lay the flour tortillas on a flat surface

Spread approximately ¾ cup of the filling onto each tortilla. Spread it evenly across the entire tortilla

FOURTH STEP:

Roll each tortilla and place seam side down

Place onto a baking tray and refrigerate for 2 to 3 hours

Remove the tray from the refrigerator and slice the tortillas into 1 inch slices

Place the tortilla slices or pinwheels on a serving platter and serve.
