Buffalo Chicken Folded Wrap.

Ingredients:

  • 2 cups cooked chicken (shredded or diced, preferably from a rotisserie chicken)
  • 1/2 cup Buffalo sauce (adjust to taste)
  • 1/4 cup ranch dressing (or blue cheese dressing)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 4 large flour tortillas

Instructions:

  1. Prepare the Chicken:
    • In a large bowl, combine the cooked chicken with the Buffalo sauce. Toss to coat the chicken evenly.
  2. Assemble the Wraps:
    • Lay out the flour tortillas on a flat surface.
    • In the center of each tortilla, spread a layer of ranch dressing (or blue cheese dressing).
    • Top with the Buffalo chicken mixture.
    • Sprinkle with shredded mozzarella cheese.
    • Add shredded lettuce, diced tomatoes, and sliced green onions.
  3. Fold the Wraps:
    • Fold the sides of the tortilla towards the center, then roll it up from the bottom to enclose the filling. You should end up with a neat, wrapped tortilla.
  4. Toast (Optional):
    • Heat a skillet over medium heat. Place the wraps seam-side down and cook until the tortilla is golden brown and crispy, about 2-3 minutes per side. This step adds a nice crunch and helps melt the cheese.
  5. Serve:
    • Slice the wraps in half diagonally and serve with additional ranch dressing or blue cheese dressing for dipping if desired.
