Brown Sugar Amish Cookies

Ingredients:
- 1 ½ cups almond flour
- ¼ cup coconut flour
- ½ cup unsalted butter (softened)
- ¾ cup keto brown sweetener (like Swerve or Lakanto)
- 1 large egg
- 1 tsp vanilla extract
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp cinnamon (optional, for extra warmth)
Instructions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, cream together the softened butter and keto brown sweetener until smooth and fluffy.
- Add the egg and vanilla extract, and mix until fully combined.
- In a separate bowl, whisk together the almond flour, coconut flour, baking soda, salt, and cinnamon.
- Slowly mix the dry ingredients into the wet ingredients until a dough forms.
- Scoop the dough into small balls and place them on the baking sheet. Flatten slightly with your fingers or a fork.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Let the cookies cool completely on the baking sheet before moving them—they’ll firm up as they cool!
