Brown Sugar Amish Cookies

Ingredients:

  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • ½ cup unsalted butter (softened)
  • ¾ cup keto brown sweetener (like Swerve or Lakanto)
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon (optional, for extra warmth)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, cream together the softened butter and keto brown sweetener until smooth and fluffy.
  3. Add the egg and vanilla extract, and mix until fully combined.
  4. In a separate bowl, whisk together the almond flour, coconut flour, baking soda, salt, and cinnamon.
  5. Slowly mix the dry ingredients into the wet ingredients until a dough forms.
  6. Scoop the dough into small balls and place them on the baking sheet. Flatten slightly with your fingers or a fork.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
  8. Let the cookies cool completely on the baking sheet before moving them—they’ll firm up as they cool!
