Broccoli chicken cheese casserole

Ingredients:

  • 2 cups cooked chicken, shredded or diced
  • 4 cups broccoli florets, steamed
  • 1 cup shredded cheddar cheese (use reduced-fat for fewer points)
  • 1/2 cup shredded mozzarella cheese (use part-skim for fewer points)
  • 1/2 cup plain non-fat Greek yogurt
  • 1/4 cup light mayonnaise
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Cooking spray

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Ingredients: Cook and shred the chicken. Steam the broccoli until it’s just tender.
  3. Make Sauce: In a bowl, combine Greek yogurt, light mayonnaise, minced garlic, Dijon mustard, salt, and pepper. Mix well.
  4. Assemble Casserole: In a baking dish coated with cooking spray, layer the cooked chicken and steamed broccoli.
  5. Add Sauce: Pour the yogurt and mayonnaise mixture over the chicken and broccoli, ensuring an even coating.
  6. Add Cheese: Sprinkle shredded cheddar and mozzarella cheese on top of the chicken and broccoli mixture.
  7. Bake: Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly, and the casserole is heated through.
  8. Broil (Optional): If you want a golden-brown crust, you can broil the casserole for an additional 1-2 minutes, watching closely to prevent burning.
  9. Serve: Remove from the oven and let it rest for a few minutes before serving.
