Diabetic-Friendly Broccoli & Cheese Patties

Ingredients
- 2 cups finely chopped steamed broccoli (well drained & squeezed dry)
- 1 cup shredded cheddar or mozzarella cheese
- 2 large eggs
- ΒΌ cup almond flour
- 2 tbsp ground flaxseed (adds fiber & helps bind)
- 1β2 tbsp grated Parmesan (optional, for flavor)
- Β½ tsp garlic powder
- Β½ tsp onion powder
- Salt & black pepper to taste
- 1β2 tbsp olive oil (for pan frying)

- Steam broccoli until tender. Let cool, then squeeze out excess water (very important).
- In a bowl, mix broccoli, cheese, eggs, almond flour, flaxseed, and seasonings.
- Form small patties with your hands.
- Heat olive oil in a non-stick pan over medium heat.
- Cook patties 3β4 minutes per side until golden and firm.
- Let rest 5 minutes before serving (helps them set).

- Place on parchment-lined tray.
- Bake at 375Β°F (190Β°C) for 18β22 minutes, flipping halfway.
