Blueberry Cream Cheese Cobbler

Ingredients:
1 stick Butter
1 egg Lightly beaten
½ cup Almond milk
½ cup Heavy Whipping Cream
½ cup Coconut Flour
1 cup Granulated Monkfruit Sweetener
2 t. Baking Powder
1/2 t. Salt
6oz Blueberries (or berry of choice)
2 oz Cream Cheese cut into little cubes
Preheat oven 350 degrees or Airfryer to 330 degrees. Melt butter and pour into a 10” cast iron skillet or pan that will fit in your airfryer. In a small bowl mix egg, milk, flour, sugar, baking powder & salt until well blended and lumps are gone. Pour mixture directly over the melted butter but do not stir. Spread berries in a single layer on top. Scatter small pieces of cream cheese on top. Bake 35-45 min or until top is golden brown and edges are bubbling. Airfryer baking time maybe less, I cooked mine till it stopped jiggling and was a golden brown on the edges. I topped mine with Locarb/Keto icecream
