Blueberry Cheesecake Parfait

Ingredients:
For the cheesecake layer:
- 1 cup cream cheese (softened)
- 1/2 cup Greek yogurt or whipped cream
- 1/4 cup powdered sugar or sweetener of choice
- 1 tsp vanilla extract
For the blueberry layer:
- 1 cup fresh or frozen blueberries
- 2 tbsp sugar or honey (adjust to taste)
- 1 tbsp lemon juice
- 1 tsp cornstarch (optional, for thickening)
- 1 tbsp water (only if using cornstarch)
For the base layer (optional):
- 1/2 cup crushed graham crackers, biscuits, or granola
Instructions:
- Blueberry Sauce:
- In a saucepan, combine blueberries, sugar, and lemon juice.
- Cook on medium heat for 5–7 minutes until berries burst and sauce thickens.
- (Optional) Mix cornstarch with water, add to berries, stir until thick.
- Let it cool.
- Cheesecake Layer:
- In a bowl, beat cream cheese until smooth.
- Add Greek yogurt (or whipped cream), sweetener, and vanilla extract. Mix until creamy and fluffy.
- Assemble the Parfaits:
- In small glasses or jars, layer crushed graham crackers (if using).
- Add a generous layer of the cheesecake mixture.
- Spoon some blueberry sauce on top.
- Repeat the layers if your glass is tall.
- Chill for 30 minutes for best texture (optional, but recommended).
- Top It Off:
- Garnish with fresh blueberries, mint leaves, or a sprinkle of biscuit crumbs.
