Blueberry Cheesecake Parfait

Ingredients:

For the cheesecake layer:

  • 1 cup cream cheese (softened)
  • 1/2 cup Greek yogurt or whipped cream
  • 1/4 cup powdered sugar or sweetener of choice
  • 1 tsp vanilla extract

For the blueberry layer:

  • 1 cup fresh or frozen blueberries
  • 2 tbsp sugar or honey (adjust to taste)
  • 1 tbsp lemon juice
  • 1 tsp cornstarch (optional, for thickening)
  • 1 tbsp water (only if using cornstarch)

For the base layer (optional):

  • 1/2 cup crushed graham crackers, biscuits, or granola

Instructions:

  1. Blueberry Sauce:
    • In a saucepan, combine blueberries, sugar, and lemon juice.
    • Cook on medium heat for 5–7 minutes until berries burst and sauce thickens.
    • (Optional) Mix cornstarch with water, add to berries, stir until thick.
    • Let it cool.
  2. Cheesecake Layer:
    • In a bowl, beat cream cheese until smooth.
    • Add Greek yogurt (or whipped cream), sweetener, and vanilla extract. Mix until creamy and fluffy.
  3. Assemble the Parfaits:
    • In small glasses or jars, layer crushed graham crackers (if using).
    • Add a generous layer of the cheesecake mixture.
    • Spoon some blueberry sauce on top.
    • Repeat the layers if your glass is tall.
    • Chill for 30 minutes for best texture (optional, but recommended).
  4. Top It Off:
    • Garnish with fresh blueberries, mint leaves, or a sprinkle of biscuit crumbs.
