Blooming Quesadilla Ring

Ingredients:
- 8 small whole wheat tortillas (6 inches each)
- 1 cup shredded reduced-fat cheddar cheese
- 1 cup cooked and shredded chicken breast
- 1/2 cup diced tomatoes
- 1/4 cup diced green onions
- 1/4 cup diced bell peppers (any color)
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- Cooking spray
- Salsa and fat-free sour cream, for serving (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix together the shredded chicken, diced tomatoes, green onions, bell peppers, chili powder, cumin, and salt until well combined.
- Lay out the tortillas on a clean surface. Place a small amount (about 2 tablespoons) of shredded cheese in the center of each tortilla.
- Spoon the chicken mixture evenly over the cheese on each tortilla.
- Fold each tortilla in half over the filling to form a half-moon shape. Arrange the folded tortillas in a circle on a large baking sheet, overlapping slightly, to create a ring shape.
- Lightly spray the top of the tortillas with cooking spray.
- Bake in the preheated oven for 15-18 minutes, or until the tortillas are golden brown and crispy.
- Remove from the oven and let cool slightly. Serve with salsa and fat-free sour cream if desired.
