black eyed pea soup with fresh veggies!

INGRDIENTS
Pack of black eyed peas
(Frozen fine)
I put in veggie stock
Tons of minced garlic
Red onions/Shallots
Apple cider vinegar/ Red wine vinegar
Shiitake /portobello mushrooms for meaty flavor(finely chopped!!)
Corn
Celery
Tomatoes
Carrots
Collard green strips or even Brussel sprouts! (I did brusell shredded)
Creole seasoning
Paprika
Salt pepper
I recommend sautéing
Mushrooms garlic, onions, shallots first with olive or avocado oil
Add in with seasonings
Put in veggie stock
Boil then simmer
About 45- 1 hour. (I do mine a little longer based on the softness you desire.)
Season to taste with hot sauce
Voila.
