Best Crustless Spinach, Onion, and Feta Quiche

Ingredients:

1 tbsp olive oil

1 small onion, chopped

2 cups fresh spinach, chopped (or 1 ½ cups frozen spinach, thawed and drained)

4 large eggs

1 cup milk (or plant-based milk)

1 cup crumbled feta cheese

½ cup shredded mozzarella cheese

½ tsp dried basil

Salt and pepper, to taste

1 tbsp fresh parsley (optional, for garnish)

Directions:

Preheat the oven to 350°F (175°C) and grease a 9-inch pie dish or quiche pan.

Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 5-7 minutes until soft and translucent.

Add the chopped spinach to the skillet and cook for another 3 minutes until wilted (if using frozen spinach, make sure it’s well-drained before adding).

In a large bowl, whisk together eggs, milk, basil, salt, and pepper.

Stir in the sautéed onions and spinach, then add the crumbled feta cheese and shredded mozzarella.

Pour the mixture into the prepared pie dish.

Bake for 30-35 minutes or until the quiche is set and golden on top.

Let it cool for a few minutes before slicing. Garnish with fresh parsley if desired, and serve warm.
