BEST CHOCOLATE BROWNIE ICE CREAM SANDWICH RECIPE

Low carb chocolate brownie filled with yummy keto vanilla ice cream. Super easy low carb chocolate brownies that everyone will love.

INGREDIENTS

  • 1 cup Almond Flour
  • ¼ cup Unsweetened Cocoa Powder
  • 3 Eggs
  • 1 cup Unsweetened Peanut Butter
  • ¾ cup Brown Erythritol
  • 1/3 cup Sugar-Free Chocolate Chips
  • 1 pint Keto Vanilla Ice Cream

INSTRUCTIONS 

  • Line an 8”x8” pan with parchment.
  • Whisk together eggs, peanut butter, and erytrhitol in a bowl.
  • Whisk together almond flour and cocoa in a separate bowl.
  • Blend the dry ingredients into the wet mixture.
  • Fold in chocolate chips into the batter.
  • Pour the batter into the prepared pan and bake for 30 minutes at 325F.
  • Take out of the oven and leave to cool.
  • Unmold and slice in half across the thickness.
  • Return half into the bottom of the pan.
  • Spread ice cream on then top add remaining brownie half to top
  • Freeze overnight.
  • Unmold and cut into serving portions.
