Baked Crispy Cauliflower

Ingredients:
- 1 medium cauliflower head, cut into florets
- 2 tbsp olive oil (or cooking spray for a lighter option)
- 1/4 cup grated Parmesan cheese
- 1/2 cup whole wheat breadcrumbs (or panko breadcrumbs)
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp smoked paprika (optional, for extra flavor)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Preheat the oven: Set the temperature to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
- Prepare the cauliflower: Wash and cut the cauliflower into bite-sized florets.
- Season the cauliflower: In a large bowl, toss the cauliflower florets with olive oil (or spray with cooking spray if you want a lighter version). Add garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well to coat all florets evenly.
- Coat with breadcrumbs: In a shallow bowl or plate, combine the Parmesan cheese and breadcrumbs. Dip each cauliflower floret into the breadcrumb mixture, pressing gently to coat it well.
- Bake: Arrange the coated cauliflower florets in a single layer on the prepared baking sheet. Bake for 20-25 minutes, flipping halfway through, until they’re golden and crispy.
- Garnish and serve: Once baked, remove from the oven and sprinkle with fresh parsley for color. Serve immediately as a side dish, snack, or appetizer.
