Avocado Toast with Feta, Cherry Tomatoes, Cranberries

Ingredients (Serves 1-2):
- 1 ripe avocado
- 2 slices keto bread (toasted)
- ¼ cup cherry tomatoes (halved)
- 2 tbsp crumbled feta cheese
- 1 tbsp unsweetened dried cranberries (or low-carb alternative)
- 1 tsp olive oil
- Salt & pepper to taste
- Optional: chili flakes, lemon juice, or fresh herbs (like parsley or basil)
Instructions:
- Toast the Bread
Toast your keto bread slices until golden and crispy. - Mash the Avocado
In a bowl, mash the avocado with a pinch of salt, pepper, and a splash of lemon juice (optional for freshness). - Assemble the Toast
Spread the mashed avocado generously over the toasted bread. - Top It Up
Add cherry tomatoes, sprinkle crumbled feta, and toss on the dried cranberries. - Finish with Flavor
Drizzle a little olive oil on top. Sprinkle chili flakes if you like a kick. - Serve Immediately
