Arizona Sunshine Lemon Pie

Ingredients:

  • 1 large lemon (whole)
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 stick (1/2 cup) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 unbaked 9-inch pie crust (store-bought or homemade)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Lemon: Wash the lemon thoroughly. Cut off the ends and then slice the lemon into thin pieces, removing any seeds.
  3. Blend Ingredients: In a blender, add the lemon slices (with the rind), sugar, eggs, melted butter, and vanilla extract. Blend until smooth and well combined. This should take about 2-3 minutes.
  4. Prepare the Pie Crust: Place the unbaked pie crust in a 9-inch pie dish. Crimp the edges if desired.
  5. Pour Filling: Pour the lemon mixture from the blender into the prepared pie crust.
  6. Bake: Place the pie in the preheated oven and bake for about 40-45 minutes, or until the filling is set and the top is slightly golden. The pie should be firm in the center when done.
  7. Cool and Serve: Allow the pie to cool completely before slicing. Serve chilled or at room temperature, optionally garnished with whipped cream or a dusting of powdered sugar.
