Almond Joy Cookies – Regular
Ingredients
- 1 1/8 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup softened butter
- 1/3 cup granulated sugar
- 1/3 cup packed light brown sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1 1/2 cups semi-sweet chocolate chips
- 1 cup sweetened flaked coconut
- 3/4 cup sliced almonds
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream together butter and sugars until light and fluffy. Beat in vanilla and egg until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don’t overmix.
- Fold in chocolate chips, coconut flakes, and sliced almonds.
- Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
- Bake for 9-12 minutes, or until edges are golden brown.
- Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
