Air Fryer Zucchini Lasagna Roll-Ups

Ingredients:

  • 4 large zucchini
  • 15 oz ricotta cheese
  • 1/4 cup Parmesan cheese, grated
  • 1 1/2 cups mozzarella cheese, shredded (divided)
  • 1 large egg
  • 2 cups marinara sauce (homemade or store-bought)
  • Salt & pepper to taste
  • 1 tablespoon olive oil

Instructions:

  1. Preheat Air Fryer:
    • Preheat your air fryer to 400°F (200°C).
  2. Prepare Zucchini:
    • Slice the zucchini into thin, 1/8-inch thick slices.
    • Toss the zucchini slices with 1 tablespoon of olive oil.
    • Arrange the zucchini slices in the air fryer basket in a single layer.
    • Air fry for 5-7 minutes until they are slightly tender. You may need to do this in batches.
  3. Prepare Filling:
    • While the zucchini is air frying, in a bowl, mix together ricotta cheese, grated Parmesan cheese, 1/2 cup of shredded mozzarella cheese, 1 egg, and salt & pepper to taste. Stir the mixture until well combined.
  4. Assemble Roll-Ups:
    • Lay a zucchini strip on a flat surface and spread about 2 tablespoons of the ricotta mixture over each individual zucchini strip.
    • Top each strip with a tablespoon of marinara sauce and a sprinkle of mozzarella cheese.
    • Roll up the zucchini strip and place it in the air fryer basket.
    • Repeat this process with the remaining zucchini strips.
  5. Air Fry:
    • Air fry the zucchini rolls at 400°F for 8-10 minutes or until the cheese is melted and bubbly, and the edges are golden.
  6. Serve:
    • Once done, remove from the air fryer and let it cool slightly before serving.
