Air Fryer Zucchini Lasagna Roll-Ups
Ingredients:
- 4 large zucchini
- 15 oz ricotta cheese
- 1/4 cup Parmesan cheese, grated
- 1 1/2 cups mozzarella cheese, shredded (divided)
- 1 large egg
- 2 cups marinara sauce (homemade or store-bought)
- Salt & pepper to taste
- 1 tablespoon olive oil
Instructions:
- Preheat Air Fryer:
- Preheat your air fryer to 400°F (200°C).
- Prepare Zucchini:
- Slice the zucchini into thin, 1/8-inch thick slices.
- Toss the zucchini slices with 1 tablespoon of olive oil.
- Arrange the zucchini slices in the air fryer basket in a single layer.
- Air fry for 5-7 minutes until they are slightly tender. You may need to do this in batches.
- Prepare Filling:
- While the zucchini is air frying, in a bowl, mix together ricotta cheese, grated Parmesan cheese, 1/2 cup of shredded mozzarella cheese, 1 egg, and salt & pepper to taste. Stir the mixture until well combined.
- Assemble Roll-Ups:
- Lay a zucchini strip on a flat surface and spread about 2 tablespoons of the ricotta mixture over each individual zucchini strip.
- Top each strip with a tablespoon of marinara sauce and a sprinkle of mozzarella cheese.
- Roll up the zucchini strip and place it in the air fryer basket.
- Repeat this process with the remaining zucchini strips.
- Air Fry:
- Air fry the zucchini rolls at 400°F for 8-10 minutes or until the cheese is melted and bubbly, and the edges are golden.
- Serve:
- Once done, remove from the air fryer and let it cool slightly before serving.
