๐ŸŒฟ Air Fryer Zucchini Fritters

Ingredients

  • 2 medium zucchini (about 2 cups grated)
  • 1 large egg
  • 1/3 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs (panko works best)
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh parsley (or 1 tbsp dried)
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1โ€“2 tbsp olive oil (for brushing)
  • Optional: 1/4 cup flour (if mixture feels too wet)

Instructions

1. Prepare the Zucchini

  1. Grate zucchini using a box grater.
  2. Place in a clean kitchen towel or paper towels and squeeze out as much moisture as possible.
    • This step is KEY to crispy fritters.

2. Make the Batter

  1. In a large bowl, combine:
    • grated zucchini
    • egg
    • Parmesan
    • breadcrumbs
    • garlic
    • parsley
    • onion powder
    • salt & pepper
  2. Mix well.
  3. If mixture is too wet, add up to 1/4 cup flour or more breadcrumbs.

3. Form the Fritters

  1. Scoop about 2 tablespoons of mixture.
  2. Shape into small patties (about 2โ€“3 inches wide).
  3. Place on a plate while you preheat the air fryer.

4. Air Fry

  1. Preheat air fryer to 400ยฐF (200ยฐC) for 5 minutes.
  2. Lightly brush both sides of fritters with olive oil.
  3. Place in a single layer in the air fryer basket.
  4. Cook 8โ€“10 minutes, flipping halfway through, until golden brown.

5. Serve

Serve warm with your favorite dip:
