Ingredients
- 2 medium zucchini (about 2 cups grated)
- 1 large egg
- 1/3 cup grated Parmesan cheese
- 1/3 cup breadcrumbs (panko works best)
- 2 cloves garlic, minced
- 2 tbsp chopped fresh parsley (or 1 tbsp dried)
- 1/4 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1โ2 tbsp olive oil (for brushing)
- Optional: 1/4 cup flour (if mixture feels too wet)
Instructions
1. Prepare the Zucchini
- Grate zucchini using a box grater.
- Place in a clean kitchen towel or paper towels and squeeze out as much moisture as possible.
- This step is KEY to crispy fritters.
2. Make the Batter
- In a large bowl, combine:
- grated zucchini
- egg
- Parmesan
- breadcrumbs
- garlic
- parsley
- onion powder
- salt & pepper
- Mix well.
- If mixture is too wet, add up to 1/4 cup flour or more breadcrumbs.
3. Form the Fritters
- Scoop about 2 tablespoons of mixture.
- Shape into small patties (about 2โ3 inches wide).
- Place on a plate while you preheat the air fryer.
4. Air Fry
- Preheat air fryer to 400ยฐF (200ยฐC) for 5 minutes.
- Lightly brush both sides of fritters with olive oil.
- Place in a single layer in the air fryer basket.
- Cook 8โ10 minutes, flipping halfway through, until golden brown.
๐ Tip: Donโt overcrowd the basket โ cook in batches.
5. Serve
Serve warm with your favorite dip:
