air fryer victoria sponge

Recipe…
260g self raising flour
250g caster sugar
3 eggs – room temperature
115g softened unsalted butter/marg
120ml skimmed milk – room temperature
1tsp vanilla extract

Mix flour, sugar, eggs, marg, milk and vanilla extract, in a mixer and mix until smooth.
Spray a sandwich tin with oil (I used one with a loose bottom. I also lined the bottom of the tin with greaseproof paper)
Preheat your air fryer, on the bake setting.
Cook on 160C for around 30 mins.
Turn temp down to 150C for next 10 mins.
Check the centre of the cake with a knife/skewer to make sure it comes out clean. If not, add a few minutes and keep checking.
I put strawberry jam and fresh cream in ours, as it’s my hubby’s favourite!
It’s a “once in a while” cake as it’s quite indulgent but hey…it is nearly Christmas!!
