Keto Chocolate Chip Cookies

Ingredients:

  • 1 ½ cups almond flour
  • ½ cup unsalted butter (softened)
  • ⅓ cup keto-friendly sweetener (like erythritol or monk fruit)
  • 1 tsp vanilla extract
  • 1 large egg
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup sugar-free chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, beat the softened butter and sweetener until creamy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Stir in almond flour, baking powder, and salt until a dough forms.
  5. Fold in the sugar-free chocolate chips.
  6. Scoop dough onto the baking sheet, flatten slightly, and bake for 10-12 minutes.
  7. Let cool before enjoying—cookies will firm up as they cool!
