air fryer stuffed peppers

Ingredients:
4 large bell peppers, tops cut off and seeds removed
1 cup cooked quinoa or brown rice
1/2 lb ground turkey or beef
1 small onion, finely chopped
1 cup diced tomatoes (canned or fresh)
1/2 cup black beans, drained and rinsed
1/2 cup corn kernels
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
1 cup shredded cheese (optional)

Instructions:
Prep the Filling: In a large pan, cook the ground turkey or beef until browned. Add the chopped onion and cook until softened. Stir in the diced tomatoes, black beans, corn, quinoa or brown rice, chili powder, cumin, salt, and pepper. Cook for a few more minutes until heated through.
Stuff the Peppers: Fill each bell pepper with the prepared mixture, pressing down slightly to pack the filling in.
Air Fry: Preheat your air fryer to 350°F (175°C). Place the stuffed peppers in the air fryer basket and cook for 10-15 minutes. If using cheese, sprinkle it on top of the peppers for the last 5 minutes of cooking.
