Air Fryer Sausage Cheddar Biscuit by Tracy

Ingredients:**

* 2 oz cream cheese

* 2 cups shredded mozzarella cheese

* 2 eggs

* 1 cup almond flour

* 2 oz cheddar cheese, sliced thin

* 6 cooked breakfast sausage patties

## **Instructions:**

1. **Preheat Air Fryer:** Set to 375°F (190°C).

2. **Melt Cheeses:** In a microwave-safe bowl, add cream cheese and mozzarella. Microwave in 30-second intervals until the cream cheese is very soft and mozzarella starts to melt. Mix until creamy.

3. **Prepare Dough:** In a separate bowl, combine beaten eggs and almond flour. Add the cheese mixture and mix well. The dough may be sticky.

4. **Form Biscuits:** Wet your hands to prevent sticking, and form the dough into 3-inch balls. Flatten each ball, place a sausage patty and a slice of cheddar cheese on the dough, then wrap the dough around the sausage and cheese. Ensure they are sealed.

5. **Air Fry:** Place the stuffed dough balls in the air fryer basket lined with parchment paper. Air fry at 375°F (190°C) for 8-10 minutes or until golden brown and set.

6. **Top with Cheese (Optional):** If desired, sprinkle additional cheddar cheese on top and air fry for an additional 1-2 minutes until the cheese is melted.
