Ingredients

Potatoes

  • 1.5 lbs (about 4โ€“5) baby potatoes or Yukon Gold
  • 1โ€“2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ยฝ tsp salt
  • ยฝ tsp black pepper
  • Optional: ยฝ tsp rosemary or thyme

Caramelized Onions

  • 1 large yellow onion, thinly sliced
  • 1 tbsp olive oil or butter
  • 1 tsp brown sugar (optional but helps caramelize)
  • Pinch of salt

To Finish

  • 2 tbsp fresh chives, chopped
  • Optional: parmesan cheese or sour cream

Instructions

๐Ÿ”น 1. Prepare the Potatoes

  1. Wash and dry potatoes.
  2. If using baby potatoes: halve or quarter depending on size.
  3. In a bowl, toss potatoes with:
    • olive oil
    • garlic powder
    • paprika
    • salt & pepper

๐Ÿ”น 2. Air Fry the Potatoes

  1. Preheat air fryer to 400ยฐF (200ยฐC).
  2. Place potatoes in a single layer in the basket.
  3. Cook for 15โ€“20 minutes, shaking halfway through.
  4. Cook until golden brown and tender.

๐Ÿ”น 3. Caramelize the Onions

  1. While potatoes cook, heat a skillet over medium heat.
  2. Add oil/butter and onions.
  3. Cook 10โ€“15 minutes, stirring occasionally, until soft and golden.
  4. Add brown sugar (optional) and cook another 2โ€“3 minutes.
  5. Season with a pinch of salt.

  1. Once potatoes are done, transfer to a serving bowl.
  2. Top with caramelized onions.
  3. Sprinkle with fresh chives.
  4. Optional: add parmesan or a dollop of sour cream.
