🥩 Ingredients

For the Meatloaf

  • 1½ lbs ground beef (80/20 for best flavor)
  • 2 large eggs
  • ¾ cup breadcrumbs (or crushed crackers / oats)
  • ½ cup milk
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp Italian seasoning

Meatloaf Topping

  • ¼ cup ketchup
  • 2 tbsp BBQ sauce (optional)

For the Roasted Potatoes

  • 1½ lbs baby potatoes, halved or quartered
  • 1½ tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Optional: rosemary or parsley

👩‍🍳 Instructions

1️⃣ Prep the Potatoes

  1. Toss potatoes with olive oil, garlic powder, paprika, salt, and pepper.
  2. Set aside.

2️⃣ Make the Meatloaf

  1. In a large bowl, mix eggs, milk, ketchup, and Worcestershire sauce.
  2. Add onion, garlic, seasonings, and breadcrumbs.
  3. Gently mix in ground beef until just combined.
  4. Shape into a loaf that fits your air fryer basket.
  5. Spread ketchup/BBQ topping on top.

3️⃣ Air Fry the Potatoes (First)

  1. Preheat air fryer to 380°F (193°C).
  2. Add potatoes to the basket.
  3. Air fry 15 minutes, shaking halfway.
  4. Remove and set aside (they’ll finish cooking later).

4️⃣ Air Fry the Meatloaf

  1. Lower temperature to 360°F (182°C).
  2. Place meatloaf on parchment or foil in the basket.
  3. Air fry 20–25 minutes.
  4. Check internal temp — must reach 160°F (71°C).

5️⃣ Finish Together

  1. Add potatoes back around the meatloaf.
  2. Air fry together 5–7 minutes until:
    • Potatoes are golden & crispy
    • Meatloaf glaze is sticky

6️⃣ Rest & Serve

  • Let meatloaf rest 5 minutes
  • Slice and serve with potatoes

  • Don’t overmix meatloaf (keeps it juicy)
  • Use parchment with holes or foil tray
  • If meatloaf browns too fast, loosely cover with foil
