🍖🫑 Air Fryer Meatloaf with Roasted Potatoes

🥩 Ingredients
For the Meatloaf
- 1½ lbs ground beef (80/20 for best flavor)
- 2 large eggs
- ¾ cup breadcrumbs (or crushed crackers / oats)
- ½ cup milk
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp Italian seasoning
Meatloaf Topping
- ¼ cup ketchup
- 2 tbsp BBQ sauce (optional)
For the Roasted Potatoes
- 1½ lbs baby potatoes, halved or quartered
- 1½ tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- Optional: rosemary or parsley
👩🍳 Instructions
1️⃣ Prep the Potatoes
- Toss potatoes with olive oil, garlic powder, paprika, salt, and pepper.
- Set aside.
2️⃣ Make the Meatloaf
- In a large bowl, mix eggs, milk, ketchup, and Worcestershire sauce.
- Add onion, garlic, seasonings, and breadcrumbs.
- Gently mix in ground beef until just combined.
- Shape into a loaf that fits your air fryer basket.
- Spread ketchup/BBQ topping on top.
3️⃣ Air Fry the Potatoes (First)
- Preheat air fryer to 380°F (193°C).
- Add potatoes to the basket.
- Air fry 15 minutes, shaking halfway.
- Remove and set aside (they’ll finish cooking later).
4️⃣ Air Fry the Meatloaf
- Lower temperature to 360°F (182°C).
- Place meatloaf on parchment or foil in the basket.
- Air fry 20–25 minutes.
- Check internal temp — must reach 160°F (71°C).
5️⃣ Finish Together
- Add potatoes back around the meatloaf.
- Air fry together 5–7 minutes until:
- Potatoes are golden & crispy
- Meatloaf glaze is sticky
6️⃣ Rest & Serve
- Let meatloaf rest 5 minutes
- Slice and serve with potatoes

- Don’t overmix meatloaf (keeps it juicy)
- Use parchment with holes or foil tray
- If meatloaf browns too fast, loosely cover with foil
