Air Fryer fried Cod

Ingredients:

  • 4 cod fillets (about 6 oz each)
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray
  • Lemon wedges (for serving)
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Prepare the Coating:
    • In a shallow dish, mix the flour with garlic powder, onion powder, paprika, salt, and pepper.
    • In another dish, beat the eggs.
    • In a third dish, place the panko breadcrumbs.
  2. Coat the Cod:
    • Pat the cod fillets dry with paper towels.
    • Dredge each fillet in the flour mixture, shaking off any excess.
    • Dip the floured fillets into the beaten eggs, making sure they’re fully coated.
    • Finally, coat the fillets in the panko breadcrumbs, pressing gently to ensure the breadcrumbs adhere.
  3. Preheat the Air Fryer:
    • Preheat your air fryer to 400°F (200°C) for about 3 minutes.
  4. Cook the Cod:
    • Lightly spray the air fryer basket with cooking spray to prevent sticking.
    • Place the coated cod fillets in a single layer in the air fryer basket. Avoid overcrowding; cook in batches if necessary.
    • Lightly spray the tops of the fillets with cooking spray.
    • Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through, until the cod is golden brown and cooked through. The internal temperature should reach 145°F (63°C).
  5. Serve:
    • Remove the cod from the air fryer and let it rest for a minute.
    • Serve with lemon wedges and garnish with chopped parsley if desired.
