Air Fryer fried Cod
Ingredients:
- 4 cod fillets (about 6 oz each)
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Cooking spray
- Lemon wedges (for serving)
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Prepare the Coating:
- In a shallow dish, mix the flour with garlic powder, onion powder, paprika, salt, and pepper.
- In another dish, beat the eggs.
- In a third dish, place the panko breadcrumbs.
- Coat the Cod:
- Pat the cod fillets dry with paper towels.
- Dredge each fillet in the flour mixture, shaking off any excess.
- Dip the floured fillets into the beaten eggs, making sure they’re fully coated.
- Finally, coat the fillets in the panko breadcrumbs, pressing gently to ensure the breadcrumbs adhere.
- Preheat the Air Fryer:
- Preheat your air fryer to 400°F (200°C) for about 3 minutes.
- Cook the Cod:
- Lightly spray the air fryer basket with cooking spray to prevent sticking.
- Place the coated cod fillets in a single layer in the air fryer basket. Avoid overcrowding; cook in batches if necessary.
- Lightly spray the tops of the fillets with cooking spray.
- Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through, until the cod is golden brown and cooked through. The internal temperature should reach 145°F (63°C).
- Serve:
- Remove the cod from the air fryer and let it rest for a minute.
- Serve with lemon wedges and garnish with chopped parsley if desired.
