Air Fryer Chicken Fajita Veggies

Ingredients:
2 chicken breasts, sliced into strips
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 large onion, sliced
2 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
Salt and pepper to taste
Juice of 1 lime
Fresh cilantro, chopped (optional)

Slice chicken breasts into thin strips. Toss chicken with 1 tablespoon olive oil and half the spices in a large bowl. If you have time, let marinate for at least 15 minutes to marinate for at least 15 minutes if you have time.

In another bowl, combine all the sliced peppers and onion with the remaining olive oil and spices. Toss until evenly coated.
Preheat your air fryer to 380°F for about 3 minutes.
Add the chicken to the air fryer basket in a single layer (you might need to work in batches). Cook for about 6-7 minutes, shaking halfway through.
Remove chicken and set aside. Add the vegetable mixture to the air fryer basket and cook for about 8 minutes, shaking halfway through, until the veggies are tender with slight char marks.
Return the chicken to the basket with the veggies, toss everything together, and cook for 1-2 more minutes until everything is hot.
Transfer to a serving dish, squeeze fresh lime juice over the top, and sprinkle with chopped cilantro if using.
Serve with warm tortillas, guacamole, sour cream, and your other favorite fajita fixings!
Tips
Don’t overcrowd your air fryer basket! Work in batches if needed for best results.
For extra flavor, add a splash of liquid smoke to the marinade.
If you like your veggies with more bite, reduce their cooking time by 1-2 minutes.
