(Serves 2–3)

Ingredients

  • 1 lb beef liver, thinly sliced
  • 1 medium onion, thinly sliced
  • ¼ cup all-purpose flour (or almond flour for low-carb)
  • 2 tbsp olive oil or melted butter
  • Salt and black pepper, to taste
  • ½ tsp paprika (optional, for flavor)
  • 1 tsp garlic powder (optional)
  • Optional garnish: chopped parsley or lemon wedges

Instructions

  1. Prep the liver
    • Rinse liver slices and pat dry with paper towels.
    • Season with salt, black pepper, garlic powder, and paprika.
    • Dredge lightly in flour, shaking off any excess.
  2. Preheat air fryer
    • Preheat to 375°F (190°C) for 3–5 minutes.
  3. Cook the onions
    • Toss sliced onions with 1 tsp olive oil, a pinch of salt, and black pepper.
    • Spread in the air fryer basket and cook at 375°F for 5–6 minutes until soft and lightly caramelized.
    • Remove and set aside.
  4. Cook the liver
    • Lightly brush the remaining olive oil on the air fryer basket or use parchment paper.
    • Arrange liver slices in a single layer.
    • Air fry at 375°F for 6–8 minutes, flipping halfway, until lightly browned but still tender inside.
    • Tip: Liver cooks quickly—overcooking makes it tough.
  5. Combine and serve
    • Toss liver with the cooked onions gently.
    • Garnish with parsley or a squeeze of lemon if desired.
    • Serve immediately with mashed potatoes, rice, or a green side salad.
