Air fried potato chunks with black beans
Recipe Ingredients:
2 cups potato chunks (you can use any type of potatoes you prefer)
1 can (15 oz) black beans, drained and rinsed
1 bell pepper, diced (any color you like)
1 onion, diced
2 cloves garlic, minced
Juice of 1 lime
Chimichurri sauce (store-bought or homemade)
Salt, to taste
Olive oil (for air frying)
Instructions:
Preheat your air fryer to 375°F (190°C).
In a bowl, toss the potato chunks with a drizzle of olive oil and a pinch of salt until they are evenly coated.
Place the potato chunks in the air fryer basket in a single layer. Cook for about 15-20 minutes or until they are crispy and golden brown, shaking the basket or flipping the potatoes halfway through for even cooking.
While the potatoes are cooking, heat a bit of olive oil in a skillet over medium heat. Add the diced onion, bell pepper, and minced garlic. Sauté until the veggies are tender and slightly caramelized.
When the air-fried potatoes are ready, remove them from the air fryer.
In a large mixing bowl, combine the air-fried potato chunks, sautéed veggies, black beans, and a squeeze of fresh lime juice. Mix gently to combine.
Drizzle chimichurri sauce over the mixture, and toss everything together until it’s well coated with the sauce. Adjust the amount of chimichurri sauce to your taste.
Season with additional salt if needed.
Serve your delicious air-fried potato and black bean dish with a garnish of fresh cilantro or parsley if desired.
