How To Make Them
- Grease and line a 20cm x 30cm lamington pan with baking paper.
- In a medium saucepan, combine milk, cinnamon sticks, and lemon rind. Heat over medium heat until it reaches a simmer.
- In a large bowl, whisk together eggs, egg yolks, caster sugar, cornflour, and vanilla extract until well combined. Strain the milk mixture over the egg mixture and whisk until combined. Remove and discard the cinnamon sticks and lemon rind.
- Transfer the milk mixture back to a cleaned medium saucepan. Cook over medium-low heat, stirring constantly, for about 5 minutes or until the mixture bubbles and thickens.
- Pour the milk mixture into the prepared pan, smoothing the top. Allow it to cool completely, then refrigerate for 3 hours or until firm.
- Turn the chilled milk mixture out onto a chopping board. Cut it into 3.5cm squares. Coat each square in flour, shaking off any excess.
- Preheat the air fryer and spray the basket with oil. Place some milk squares in the fryer and spray them with oil. Cook at 200°C for 10 minutes or until they turn golden. Repeat this step with the remaining milk squares.
- Sprinkle the air-fried milk squares with cinnamon sugar and serve.
