Ingredients:

  • 1 lb extra lean beef mince
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 medium carrots, peeled and diced
  • 2 celery sticks, diced
  • 1 tbsp tomato puree
  • 1 tbsp Worcestershire sauce
  • 1 beef stock cube, crumbled
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • 2 lbs potatoes, peeled and chopped
  • 1/2 cup skimmed milk
  • 1 tbsp low-fat spread

Instructions:

  1. Preheat the oven to 200°C/400°F/Gas 6.
  2. Boil the potatoes in a large pot of salted water for about 20 minutes, or until they are soft.
  3. Drain the potatoes and mash them with the skimmed milk and low-fat spread until smooth. Set aside.
  4. In a non-stick frying pan, brown the beef mince over medium heat, breaking it up with a wooden spoon as it cooks. Drain any excess fat.
  5. Add the onion, garlic, carrots, and celery to the pan and cook for 5-7 minutes, stirring occasionally.
  6. Stir in the tomato puree, Worcestershire sauce, beef stock cube, thyme, rosemary, salt, and pepper. Simmer for 15-20 minutes until the sauce has thickened.
  7. Spoon the beef mixture into a 9-inch square baking dish. Spread the mashed potatoes over the top of the beef mixture.
  8. Bake for 25-30 minutes, or until the potatoes are golden brown on top.
  9. Serve hot and enjoy!
