New England Marlborough Pie

New England Marlborough Pie recipe features tender apples baked in a rich, custard-like filling with warm spices and a buttery crust. This classic holiday dessert is perfect for Thanksgiving, potlucks, or cozy family gatherings.

Ingredients
1 unbaked 9-inch pie crust
3 medium apples peeled, cored, and chopped
4 tablespoons unsalted butter
¾ cup granulated sugar
3 large eggs
½ cup heavy cream
2 tablespoons fresh lemon juice
1 teaspoon finely grated lemon zest
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
Instructions
Preheat the oven to 375°F and fit the pie crust into a 9-inch pie dish.
Cook the chopped apples with a small splash of water for 10–15 minutes, until very soft.
Drain excess liquid and mash the apples until relatively smooth. Measure about 1½ cups apple puree.
Stir the butter into the warm apple puree until melted.
Whisk the granulated sugar and eggs together until smooth.
Add the heavy cream, lemon juice, lemon zest, cinnamon, nutmeg, and salt.
Whisk in the apple mixture until evenly combined.
Pour the filling into the prepared pie crust.
Bake for 40–50 minutes, until the edges are set and the center has only a slight wobble.
Cool completely before slicing and serving.
