Ingredients
- 4 bone-in, skinless chicken thighs
- 2 tbsp olive oil
- 1 cup (150g) mushrooms, sliced
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup (240ml) heavy cream
- 1/2 cup (120ml) chicken broth
- 1/2 cup (50g) finely grated Parmesan cheese
- 1 tsp dried thyme
- 1/2 tsp dried rosemary
- 1/2 tsp smoked paprika
- Salt and freshly ground black pepper, to taste
- 2 tbsp fresh parsley, chopped, for garnish
How to Make Creamy Garlic Mushroom Chicken Thighs
1. Prepare and Season the Chicken
Pat the chicken thighs dry with paper towels. Season both sides generously with salt, black pepper and smoked paprika.
2. Sear the Chicken Thighs
Heat the olive oil in a large skillet over medium-high heat. Add the chicken thighs and sear for 5–7 minutes on the first side, until deeply golden and crisp. Flip and cook for another 5–7 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Transfer the chicken to a plate and keep warm.
3. Brown the Mushrooms
Using the same skillet, add the sliced mushrooms. Cook for about 4–5 minutes, stirring occasionally, until the mushrooms release their moisture and become nicely browned.
4. Cook the Onion and Garlic
Add the chopped onion and cook for 2–3 minutes, until softened and lightly golden. Stir in the minced garlic and cook for about 30–60 seconds, just until fragrant.
5. Deglaze with Chicken Broth
Pour in the chicken broth and scrape the browned bits from the bottom of the skillet. Let the broth simmer for 1–2 minutes to bring those rich flavors into the sauce.
6. Make the Creamy Parmesan Sauce
Reduce the heat to medium-low. Pour in the heavy cream and stir gently. Add the Parmesan cheese, dried thyme and rosemary. Continue simmering for about 4–5 minutes, stirring occasionally, until the sauce becomes creamy and slightly thickened.
7. Adjust the Seasoning
Taste the sauce and adjust the seasoning with additional salt and black pepper if needed.
8. Return the Chicken to the Skillet
Return the chicken thighs and any accumulated juices to the skillet. Spoon the creamy mushroom garlic sauce over the chicken and simmer gently for another 3–5 minutes, allowing the chicken to warm through and absorb the flavors.
9. Garnish and Serve
Remove from the heat and sprinkle generously with fresh chopped parsley. Serve immediately with mashed potatoes, steamed vegetables, rice or crusty bread to soak up the creamy sauce.
