Ingredients
- Protein:
- 1.5 lb boneless skinless chicken breast or thighs – about 680g, cut into 1-inch chunks
- 1 tbsp extra virgin olive oil
- 1/2 tsp sea salt + 1/4 tsp black pepper
- 1/2 tsp turmeric + pinch black pepper – optional anti-inflammation
- Hearty veggies:
- 3 medium yellow potatoes, cubed – about 400g
- 3 medium carrots, diced
- 2 stalks celery, diced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 cup frozen green peas – added at end
- Liquid & creamy without cream:
- 4 cups low-sodium chicken broth or vegetable broth
- 1 cup unsweetened soy milk or low-fat milk – for creaminess
- 2 tbsp whole wheat flour or 1 tbsp ground flaxseed – to thicken
- 1 tbsp lemon juice
- Herbs:
- 1 tsp dried thyme
- 1 tsp dried rosemary, crushed
- 1 bay leaf
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill or thyme – optional
- Serve – optional:
- Whole grain sourdough, toasted – as shown
Instructions - Prep:
- Pat chicken dry, season with salt, pepper, turmeric if using.
- Dice all veggies similar size.
- Optional sear – for flavor:
- Heat olive oil in pan over medium, sear chicken 3 min until lightly golden. Skip to save time if needed.
- Load slow cooker:
- Add potatoes, carrots, celery, onion, garlic to slow cooker.
- Place chicken on top.
- Add thyme, rosemary, bay leaf.
- Pour in 3 1/2 cups broth – reserve 1/2 cup.
- Cook:
- Cover, cook on low 6-7 hours or high 3-4 hours until chicken tender and potatoes soft.
- Make creamy:
- In small bowl whisk reserved 1/2 cup broth with whole wheat flour or flaxseed until smooth.
- Stir in soy milk.
- Pour into cooker, stir gently.
- Add peas.
- Cook uncovered on high 20-30 min more until slightly thickened.
- Shred & finish:
- Shred chicken pieces with two forks inside cooker – leave some chunky.
- Remove bay leaf.
- Stir in lemon juice and fresh parsley / dill.
- Taste, adjust salt.
- Serve:
- Ladle into bowls.
- Serve with toasted whole grain bread if you like, as in your share.
- Store:
- Fridge airtight 4 days.
- Freezer without peas up to 2 months – peas get mushy. Add fresh peas when reheating.
- Reheat gently, add splash broth if too thick.
