Ingredients
For the Fritters
2 medium zucchini, grated
1 teaspoon salt
2 large eggs
1 cup grated Parmesan cheese
½ cup shredded mozzarella cheese
½ cup all-purpose flour
2 cloves garlic, minced
2 tablespoons chopped fresh parsley
2 tablespoons chopped chives
½ teaspoon black pepper
½ teaspoon paprika
¼ teaspoon onion powder
2 tablespoons olive oil for frying
For the Creamy Herb Dip
½ cup mayonnaise
¼ cup sour cream or Greek yogurt
1 tablespoon lemon juice
1 tablespoon chopped parsley
1 tablespoon chopped dill
1 teaspoon garlic powder
Salt and black pepper to taste
Instructions
Wash and grate the zucchini. Sprinkle with salt and let it rest for 10 minutes. Squeeze out as much moisture as possible using a clean kitchen towel.
In a large bowl, combine the zucchini, eggs, Parmesan, mozzarella, flour, garlic, parsley, chives, black pepper, paprika, and onion powder. Mix until well combined.
Heat olive oil in a large skillet over medium heat. Scoop about 2 tablespoons of the mixture for each fritter and gently flatten.
Cook for 3–4 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate.
To prepare the dip, whisk together the mayonnaise, sour cream, lemon juice, parsley, dill, garlic powder, salt, and pepper until smooth.
Serve the fritters warm with the creamy herb dip.
