Bacon Swiss Hamburger Steaks

There is something especially satisfying about a skillet full of homemade hamburger steaks covered in onion gravy. The patties are flavorful enough to stand on their own, but the combination of gravy, bacon, and Swiss cheese takes them to another level.

  • Juicy and tender: Breadcrumbs, milk, and egg help keep the beef patties moist.
  • Big, savory flavor: Worcestershire sauce, garlic, onion, paprika, and Italian seasoning create a deeply seasoned beef mixture.
  • Crispy bacon: Bacon adds smoky flavor and irresistible texture.
  • Melty Swiss cheese: Swiss cheese adds a creamy, slightly nutty finish.
  • Rich onion gravy: Caramelized onions and beef broth create a silky sauce that’s perfect over mashed potatoes.
  • Easy one-skillet meal: Most of the recipe can be prepared in the same skillet, making cleanup simple.

Ingredients

For the Hamburger Steaks

  • 1½ pounds ground beef, preferably 80/20: The higher fat content keeps the hamburger steaks juicy and flavorful while they cook.
  • ½ cup breadcrumbs: Breadcrumbs help bind the patties together and create a tender texture.
  • ¼ cup milk: Milk softens the breadcrumbs and contributes moisture to the beef mixture.
  • 1 large egg: The egg acts as a binder, helping the hamburger steaks hold their shape.
  • 1 teaspoon Worcestershire sauce: Adds a savory, slightly tangy umami flavor that complements beef beautifully.
  • 1 teaspoon garlic powder: Provides warm, savory garlic flavor throughout the patties.
  • 1 teaspoon onion powder: Adds concentrated onion flavor without adding extra moisture.
  • ½ teaspoon smoked paprika: Gives the beef a subtle smoky flavor and beautiful color.
  • 1 teaspoon salt: Enhances the flavor of the beef and seasonings.
  • ½ teaspoon black pepper: Adds mild heat and balances the richness of the meat.
  • ½ teaspoon Italian seasoning: Adds a blend of dried herbs for extra savory depth.
  • 6 slices bacon: Adds crisp texture and smoky, salty flavor.
  • 4–6 slices Swiss cheese: Melts beautifully over the hot hamburger steaks and adds creamy richness.
  • 2 tablespoons vegetable oil, if needed: Helps prevent sticking and promotes even browning if the skillet needs additional fat.

For the Onion Gravy

  • 1 large yellow onion, thinly sliced: The onions become sweet and deeply savory as they cook.
  • 2 tablespoons butter: Provides richness and helps sauté the onions.
  • 2 tablespoons all-purpose flour: Thickens the beef broth into a smooth, hearty gravy.
  • 2 cups beef broth: Forms the flavorful base of the gravy.
  • 1 tablespoon Worcestershire sauce: Intensifies the savory flavor of the gravy.
  • 1 teaspoon Dijon mustard: Adds subtle tanginess and complexity.
  • ½ teaspoon garlic powder: Adds another layer of savory flavor.
  • ½ teaspoon black pepper: Provides gentle spice and balances the rich gravy.
  • ½ teaspoon onion powder: Boosts the onion flavor of the sauce.
  • Salt, to taste: Adjust according to the saltiness of your beef broth and bacon.
  • 1 teaspoon fresh or dried thyme, optional: Adds an aromatic herbal note that pairs especially well with beef and onions.

Optional Garnishes

  • Fresh parsley for color and freshness
  • Extra crispy bacon for even more smoky flavor
  • Caramelized onions for an extra-sweet onion finish
  • Cracked black pepper for a restaurant-style presentation

How to Make Hamburger Steaks with Onion Gravy

Step 1: Prepare the Beef Mixture

In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, black pepper, and Italian seasoning. Mix gently with your hands or a fork until everything is evenly combined.

Avoid overmixing the meat. Working the beef too much can make the finished hamburger steaks dense instead of tender.

Step 2: Shape the Hamburger Steaks

Divide the mixture into 4 to 6 portions, depending on how large you want your hamburger steaks. Shape each portion into a thick oval or round patty. Make the patties slightly wider than you want the finished steaks because they will shrink slightly during cooking.

Step 3: Cook the Bacon

Heat a large skillet over medium heat and cook the bacon until crisp and golden. Transfer the bacon to a paper towel-lined plate and reserve a little of the rendered bacon fat in the skillet.

The bacon can be served whole on top of the finished hamburger steaks or crumbled over them just before serving.

Step 4: Brown the Hamburger Steaks

Place the hamburger steaks in the hot skillet. Add a little vegetable oil if the skillet does not contain enough fat. Cook for approximately 4–5 minutes per side, or until the patties are deeply browned and cooked through.

Transfer the cooked hamburger steaks to a plate and loosely cover them while you prepare the gravy. Do not wipe out the skillet—the browned bits left behind are essential for creating a flavorful onion gravy.

Step 5: Caramelize the Onions

Add the butter and thinly sliced yellow onion to the same skillet. Cook over medium heat, stirring occasionally, until the onions become soft, golden, and lightly caramelized.

This step develops much of the gravy’s flavor, so don’t rush it. If the onions begin to brown too quickly, reduce the heat slightly and continue cooking until tender.

Step 6: Make the Onion Gravy

Sprinkle the all-purpose flour over the onions and stir well. Cook for about 1 minute to remove the raw flour taste.

Slowly pour in the beef broth, stirring constantly to prevent lumps. Add Worcestershire sauce, Dijon mustard, garlic powder, black pepper, onion powder, and thyme if using.

Bring the gravy to a gentle simmer. Continue cooking for several minutes, stirring frequently, until the sauce thickens into a smooth, rich consistency. Taste and adjust the salt as needed.

Step 7: Return the Steaks to the Skillet

Nestle the browned hamburger steaks into the onion gravy. Spoon some of the gravy over the tops and allow everything to simmer together for a few minutes. This final step lets the beef absorb the savory flavors of the sauce.

Step 8: Add Swiss Cheese and Bacon

Place 4–6 slices of Swiss cheese over the hamburger steaks. Cover the skillet for 1–2 minutes, just until the cheese becomes melted and gooey.

Top each steak with crispy bacon and spoon plenty of onion gravy over everything. Finish with fresh parsley and cracked black pepper if desired.

Pro Tips for Perfect Hamburger Steaks

  • Use 80/20 ground beef: The fat provides moisture and flavor, producing more tender hamburger steaks.
  • Don’t overmix: Mix just until the ingredients are combined to keep the patties tender.
  • Brown the patties well: A good sear creates flavorful browned bits that make the onion gravy taste much richer.
  • Don’t rush the onions: Properly softened and caramelized onions add sweetness and depth to the gravy.
  • Add broth gradually: Slowly whisking in the beef broth helps produce a smooth, lump-free gravy.
  • Check seasoning before serving: Bacon and beef broth can already contain plenty of salt, so taste the gravy before adding more.
  • Don’t overcook the beef: Cook the hamburger steaks until they reach a safe internal temperature while avoiding unnecessary extra cooking.
  • Let the gravy coat the steaks: A short final simmer allows the flavors to come together and gives every bite plenty of sauce.
