 Crispy Greek Chicken Pita Platter

1. Crispy chicken

Ingredients

  • 700 g (1½ lb) boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • ½ cup regular breadcrumbs
  • ½ cup flour
  • 2 eggs
  • ½ cup Greek yogurt
  • 3 garlic cloves, grated
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp chili flakes
  • Oil, for frying

Make it

  1. Slice chicken breasts into thick strips or cutlets.
  2. Mix Greek yogurt, garlic, oregano, paprika, salt, pepper, onion powder and chili flakes. Coat the chicken and marinate for at least 30 minutes—overnight is even better.
  3. Set up:
    • Bowl 1: flour
    • Bowl 2: beaten eggs
    • Bowl 3: panko + breadcrumbs + a pinch of oregano + paprika
  4. Coat chicken in flour → egg → breadcrumb mixture. Press the crumbs on firmly.
  5. Heat about ½ inch of oil over medium-high heat.
  6. Fry chicken about 3–4 minutes per side, until deeply golden and cooked through. Chicken should reach 165°F / 74°C internally.
  7. Drain on a rack, not directly on paper towels, so the crust stays crispy.

⭐ Secret for the crust

Mix 1–2 tbsp of the yogurt marinade into the breadcrumbs before breading. You’ll get little irregular crispy bits like the chicken in the photo.


🧄 Feta-Dill Tzatziki

This is the sauce piled over the chicken.

  • 1 cup thick Greek yogurt
  • ½ cucumber, grated and squeezed very dry
  • 100 g (3½ oz) feta, crumbled
  • 2 garlic cloves, finely grated
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • ½ tsp salt
  • Black pepper

Mix everything together and refrigerate for 20–30 minutes.

Don’t skip squeezing the cucumber—otherwise the sauce becomes watery.


🍯 Hot Honey Garlic Glaze

This is what gives the chicken that gorgeous glossy coating.

  • ⅓ cup honey
  • 1 tbsp hot sauce
  • 1 tbsp lemon juice
  • 1 tbsp butter
  • 1 small garlic clove, grated
  • ¼ tsp chili flakes
  • Pinch of salt

Warm everything together over low heat for 1–2 minutes.

Brush a little over the crispy chicken right before serving. Don’t drown it—the crust should remain crunchy.


🥒 Greek Salad

  • 1 large cucumber, chopped
  • 250 g cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ cup feta
  • Handful fresh parsley
  • Handful fresh dill

Dressing

  • 3 tbsp olive oil
  • 1½ tbsp lemon juice
  • 1 tbsp red-wine vinegar
  • 1 tsp dried oregano
  • ½ tsp Dijon mustard
  • Salt + pepper

Toss just before serving.


🫓 To assemble the platter

Warm 4 Greek pitas until soft.

Put each pita on a plate and add:

  1. A drizzle of olive oil
  2. Crispy chicken pieces
  3. Hot honey glaze
  4. Big spoonfuls of feta-dill tzatziki
  5. Greek cucumber-tomato salad
  6. Extra feta
  7. Fresh dill
  8. Lemon wedges

For the full restaurant-style plate, add crispy Greek fries or roasted potatoes on the side and a small bowl of the savory dipping sauce.

🔥 The finishing touch

Right before serving, drizzle:

hot honey → tzatziki → olive oil → crumbled feta → fresh dill → cracked black pepper

That combination of crunchy salty chicken + sweet heat + cold garlicky feta sauce + fresh acidic salad is what makes the dish work.

Best shortcut: If you want it very close to the photo, use thin chicken cutlets rather than nuggets and fry them until the breading is dark golden and extra crisp.
