Ingredients

  • 2 pounds 900 g russet potatoes, peeled and cut into chunks
  • 2 cups 200 g shredded mozzarella cheese
  • 2 tablespoons cornstarch

Optional (not included in the 3 ingredients):

  • Cooking spray or a little butter for greasing the pan
  • Chopped parsley for garnish

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a ring-shaped baking pan (Bundt pan) or a round cake pan with a small oven-safe bowl placed in the center to create a ring shape.
  • Place the potato chunks in a large pot of salted water and bring to a boil. Cook for 15–20 minutes, or until fork-tender.
  • Drain the potatoes thoroughly and let them sit for 2–3 minutes to allow excess moisture to evaporate.
  • Mash the potatoes until completely smooth with no large lumps.
  • Sprinkle the cornstarch over the warm mashed potatoes and mix well until fully incorporated.
  • Fold in the shredded mozzarella cheese, stirring until evenly distributed throughout the potato mixture.
  • Transfer the mixture into the prepared ring pan. Press it down firmly with the back of a spoon to remove air pockets and create an even surface.
  • Bake for 40–45 minutes, or until the top is golden brown and the edges are lightly crisp.
  • Let the potato ring rest for 10 minutes before carefully inverting it onto a serving plate.
  • Garnish with chopped parsley if desired and serve warm.
