2 large yellow onions, thinly sliced into rings
2 tbsp olive oil or butter
3 cloves garlic, minced
1 cup low-sodium beef broth (gives that authentic French onion depth)

1 tsp dried thyme

Step-by-Step Instructions
Preheat & Sear: Preheat your oven to 400°F (200°C). Season the chicken thighs generously on both sides with salt, pepper, and half of the thyme. Heat a splash of oil in an oven-safe skillet or Dutch oven over medium-high heat, and sear the chicken for 3–4 minutes per side until golden brown. Remove and set aside.
Caramelize the Onions: In the same pan, turn the heat to medium-low, add the butter/oil and the sliced onions. Cook slowly for 12 to 15 minutes, stirring occasionally, until soft, golden, and sweet. Add the minced garlic and remaining thyme during the last 2 minutes.
Build the Glaze: Pour in the beef broth, soy sauce, and balsamic vinegar, scraping up any delicious browned bits from the bottom of the pan. Let it simmer for 3 minutes until slightly reduced.
Bake to Perfection: Nestled the seared chicken thighs right back into the pan, spooning those luscious caramelized onions and juices all over the top. Bake uncovered at 400°F for 20 to 25 minutes until the chicken is fully cooked through and tender. (If using cheese, sprinkle it on during the last 5 minutes until melted and bubbly!)
