Ingredients
- 1 cup cottage cheese
- 3 large eggs
- 1½ cups oat flour
- 1 tsp baking powder
- ½ tsp salt
- 1 tbsp olive oil
- 1 tbsp chia seeds
- 1 tbsp ground flaxseed
- 2 tbsp sunflower seeds
- 1 tbsp sesame seeds
- ½ tsp garlic powder (optional)
- 1 tbsp mixed seeds, for topping
Instructions
- Preheat your oven to 350°F (175°C). Line a small loaf pan with parchment paper.
- Add cottage cheese and eggs to a blender and blend until smooth.
- Pour the mixture into a large bowl. Add oat flour, baking powder, salt, olive oil, chia seeds, flaxseed, sunflower seeds, sesame seeds, and garlic powder.
- Stir until you have a thick, evenly combined batter.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Sprinkle the remaining mixed seeds over the top and gently press them into the batter.
- Bake for 35–40 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack and cool completely before slicing.
Serving
Slice and serve with cottage cheese, avocado, eggs, turkey, or your favorite spread. Store leftovers in an airtight container in the refrigerator for up to 4 days.
