Ingredients
Shrimp
- 450 g (1 lb) large shrimp, peeled and deveined
- 1Β½ tbsp olive oil
- 3 cloves garlic, finely minced
- 1 tsp smoked paprika
- Β½ tsp chili flakes
- Β½ tsp cumin
- Β½ tsp salt
- ΒΌ tsp black pepper
- 1 tsp lemon juice
- 1 tsp honey
- 1 tbsp chopped parsley or cilantro
Bowl
- 1 large avocado, sliced
- 4 eggs
- 1 cup cherry tomatoes, halved
- 2 cups arugula or mixed greens
- ΒΌ small red onion, thinly sliced
- 1 lemon, cut into wedges
- Fresh parsley/cilantro
- Extra-virgin olive oil
π₯ Make it
- Cook the eggs: Bring water to a boil. Gently add eggs and cook 7 minutes for the jammy centers shown in the photo. Transfer immediately to ice water, then peel.
- Season the shrimp: Mix olive oil, garlic, paprika, chili flakes, cumin, salt, pepper, lemon juice and honey. Toss shrimp thoroughly and let sit for 10 minutes.
- Get the char: Heat a heavy skillet or grill pan over high heat until very hot. Add shrimp in a single layer. Cook about 2 minutes per side, until opaque and nicely browned/charred. Don’t overcrowd the pan.
- Build the bowl: Arrange arugula, sliced avocado, tomatoes and red onion on a plate. Add the hot shrimp and halved eggs.
- Finish: Sprinkle generously with parsley/cilantro, cracked black pepper and chili flakes. Squeeze fresh lemon over everything and drizzle with a little olive oil.
β The secret to making it taste really good
After removing the shrimp, put the pan back on medium heat and add 1 tbsp butter + 1 minced garlic clove + a squeeze of lemon. Scrape up the browned bits for about 30 seconds, then spoon that buttery garlic sauce over the shrimp.
