Ingredients
For the Whipped Chocolate Nougat Core

- Light Corn Syrup (or Glucose Syrup): 160 ml (⅔ cup)
- Water: 60 ml (¼ cup)
- Egg Whites (room temperature): 2 large egg whites (approx. 60 g)
- Fine Sea Salt: ¼ tsp
- Malted Milk Powder: 3 tbsp (25 g)
- Unsweetened Cocoa Powder (Dutch-processed): 2 tbsp (15 g), sifted
- Semi-Sweet Chocolate (melted and cooled slightly): 85 g (3 oz)
- Pure Vanilla Extract: 1 tsp (5 ml)
- Powdered Sugar (for dusting work surface): 2 tbsp
For the Milk Chocolate Coating
- High-Quality Milk Chocolate (couverture or chopped baking bars): 450 g (16 oz), divided
- Neutral Coconut Oil or Cocoa Butter (optional, for smoother dipping): 1 tsp
Step-by-Step Instructions
1. Prepare the Pan and Setup
- Line an 8×8-inch square baking pan with parchment paper, leaving generous overhang on two opposite sides to serve as handles later.
- Lightly grease the parchment with non-stick spray or neutral oil, then wipe off excess with a paper towel. Set aside.
- Melt the 85 g of semi-sweet chocolate in a heatproof bowl set over a pan of barely simmering water (or in 20-second microwave bursts). Whisk in the malted milk powder and sifted cocoa powder until smooth. Keep warm and fluid at room temperature.
2. Cook the Sugar Syrup
- In a heavy-bottomed saucepan, combine granulated sugar, light corn syrup, and water.
- Place over medium heat and stir gently until the sugar crystals dissolve completely.
- Clip the candy thermometer to the side of the pan, ensuring the bulb rests in the syrup without touching the pan bottom.
- Stop stirring once the syrup comes to a rolling boil. Let it cook undisturbed until it reaches 121°C (250°F)—the firm ball stage.
3. Whip the Egg Whites
- When the sugar syrup registers around 110°C (230°F) on the thermometer, place the egg whites and salt into the clean, grease-free bowl of a stand mixer.
- Whisk on medium-high speed until stiff peaks form.
4. Emulsify and Whip the Nougat
- As soon as the sugar syrup hits 121°C (250°F), remove it immediately from the heat.
- Turn the mixer speed to medium-low. Slowly and steadily pour the hot syrup down the inside edge of the mixer bowl in a thin stream, avoiding the spinning whisk wires to prevent splattering.
- Once all syrup is added, increase the speed to high and whip continuously for 5 to 7 minutes. The mixture will turn glossy, thick, voluminous, and start to cool slightly.
- Reduce speed to low, pour in the vanilla extract, and gently fold in the melted chocolate-malt mixture. Mix just until fully incorporated and uniformly cocoa-colored. Avoid overmixing to keep the aeration intact.
5. Mold and Set the Center
- Immediately scrape the warm, pliable nougat into the prepared baking pan using a greased silicone spatula.
- Smooth the top level with an offset spatula.
- Allow the slab to set at room temperature for 2 hours (or 45 minutes in the refrigerator) until firm enough to cut without losing its shape.
6. Portion the Bars
- Lift the set nougat out of the pan using the parchment handles and place it on a cutting board lightly dusted with powdered sugar.
- Using a sharp, lightly oiled chef’s knife, trim the edges square.
- Slice the slab into 8 to 10 equal rectangular bars (approximately 3.5 inches long by 1 inch wide).
- Place the sliced bars onto a parchment-lined tray and chill in the refrigerator for 20 minutes before dipping. Chilling keeps the corners rigid during the warm chocolate bath.
7. Temper and Dip the Chocolate Coating
- Chop 450 g of milk chocolate into small, uniform pieces.
- Place two-thirds (300 g) of the chopped chocolate into a dry, heatproof bowl set over a pot of barely simmering water (double boiler method), stirring until melted and registering 45°C (113°F).
- Remove from heat and stir in the remaining 150 g of chopped chocolate in small batches until completely melted and smooth. Stir continuously until the chocolate cools to 29°C–30°C (84°F–86°F) for milk chocolate temper.
- Stir in the coconut oil or cocoa butter for high gloss and fluid dipping consistency.
8. Coat and Create the Classic Rippled Finish
- Set a wire rack over a rimmed baking sheet lined with parchment paper.
- Working with one chilled nougat center at a time, place it face-up on a chocolate dipping fork (or standard dinner fork).
- Submerge the bar completely into the tempered chocolate, lift it up, and tap the handle against the rim of the bowl several times to let excess chocolate run off.
- Slide the bottom of the fork against the bowl lip to clean the base, then transfer the bar onto the wire rack or parchment paper.
- Before the chocolate sets, gently touch the flat of an offset spatula or fork across the top of the bar and lift straight up to create the signature raised, artisanal wave ripples.
- Repeat for all remaining bars. Let the chocolate set at room temperature (18°C–20°C / 65°F–68°F) for 30 minutes until crisp and matte-glossy.
Storage and Shelf Life
- Room Temperature: Store the finished bars in an airtight container lined with wax paper in a cool, dry place for up to 3 weeks.
- Refrigeration: If storing in warmer climates, keep in an airtight container in the fridge for up to 6 weeks. Bring to room temperature 15 minutes before serving for maximum whipped-texture softness.
- Freezing: Wrap individual set bars in foil and seal in a freezer-safe bag for up to 3 months. Thaw in the refrigerator overnight.
