Sticky Honey Soy Chicken with Rice & Fresh Vegetables

2 chicken breasts, cubed

1 tbsp sesame oil

3 garlic cloves

1 tsp grated ginger

1 tbsp cornstarch

Salt and pepper

Sauce

3 tbsp honey

3 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp sweet chili sauce

2 cups jasmine rice

4 cups water

Vegetables

2 cups broccoli

2 carrots

1 red bell pepper

½ green bell pepper

Method

Cook the jasmine rice until fluffy.

Stir-fry the vegetables until crisp-tender.

Coat the chicken lightly with cornstarch and cook until golden.

Simmer the honey soy sauce with garlic and ginger, then thicken with the cornstarch mixture.

Toss the chicken in the sauce and serve with rice and vegetables. Finish with sesame seeds and green onions.

Tips

Fresh ginger gives the sauce a brighter flavor.
