High-Protein Baked Cream Cheese Taco Roll-Ups

Makes: 8 roll-ups
Protein: About 20–25g per roll-up

Ingredients

  • 1 lb (450 g) lean ground turkey or extra-lean ground beef
  • 8 oz (225 g) reduced-fat cream cheese, softened
  • 1 cup low-fat cottage cheese
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 cup shredded reduced-fat cheddar cheese
  • 8 high-protein tortillas
  • ¼ cup water
  • Cooking spray

Instructions

  1. Preheat the oven
    • Preheat to 375°F (190°C).
    • Line a baking sheet with parchment paper.
  2. Cook the meat
    • Brown the ground turkey or beef in a skillet over medium heat.
    • Drain excess fat if needed.
    • Add taco seasoning and water.
    • Simmer for 2–3 minutes.
  3. Make the filling
    • In a bowl, combine cream cheese and cottage cheese until smooth.
    • Stir in the taco meat and ½ cup shredded cheddar.
  4. Assemble
    • Divide the filling evenly among the tortillas.
    • Roll tightly and place seam-side down on the baking sheet.
  5. Bake
    • Lightly spray the tops with cooking spray.
    • Sprinkle with the remaining cheddar cheese.
    • Bake for 15–20 minutes until golden and crispy.
  6. Serve
    • Let cool for 5 minutes.
    • Serve with salsa, Greek yogurt, or guacamole.
