
High-Protein Baked Cream Cheese Taco Roll-Ups
Makes: 8 roll-ups
Protein: About 20–25g per roll-up
Ingredients
- 1 lb (450 g) lean ground turkey or extra-lean ground beef
- 8 oz (225 g) reduced-fat cream cheese, softened
- 1 cup low-fat cottage cheese
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1 cup shredded reduced-fat cheddar cheese
- 8 high-protein tortillas
- ¼ cup water
- Cooking spray
Instructions
- Preheat the oven
- Preheat to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Cook the meat
- Brown the ground turkey or beef in a skillet over medium heat.
- Drain excess fat if needed.
- Add taco seasoning and water.
- Simmer for 2–3 minutes.
- Make the filling
- In a bowl, combine cream cheese and cottage cheese until smooth.
- Stir in the taco meat and ½ cup shredded cheddar.
- Assemble
- Divide the filling evenly among the tortillas.
- Roll tightly and place seam-side down on the baking sheet.
- Bake
- Lightly spray the tops with cooking spray.
- Sprinkle with the remaining cheddar cheese.
- Bake for 15–20 minutes until golden and crispy.
- Serve
- Let cool for 5 minutes.
- Serve with salsa, Greek yogurt, or guacamole.
