Ingredients:

Golden Cookie Crust:

– 1½ cups crushed golden sandwich cookies for buttery birthday-cake crust texture

– 3 tbsp melted butter to hold the crust together

Birthday Cake Cheesecake Filling:

– 1 cup Good Culture cottage cheese

– 1 cup vanilla Greek yogurt

– 4 oz light cream cheese, softened

– 1 small box vanilla pudding mix for extra thick birthday-cake texture

– 2 tbsp honey or maple syrup

– 1 tsp vanilla extract

– ¼ cup rainbow sprinkles folded INSIDE the filling for funfetti texture

Layers + Toppings:

– ½ cup crushed golden cookies between layers for soft crunch

– Whipped topping swirls

– Heavy rainbow sprinkles in the center

– Light white chocolate drizzle

– Optional birthday cake cookie chunks or mini frosted cookie pieces

Instructions:

1. Mix crushed golden cookies and melted butter until sandy and slightly wet.

2. Press the crust mixture into ONE clear square dessert container while keeping the crust layer visible from the side.

3. Blend cottage cheese, Greek yogurt, cream cheese, pudding mix, honey, and vanilla until EXTRA thick, smooth, fluffy, and creamy.

4. Fold rainbow sprinkles gently into the cheesecake filling.

5. Spoon half the cheesecake filling into the container.

6. Add a layer of crushed golden cookies for soft crunchy texture.

7. Add the remaining cheesecake filling and slightly overfill the container for the indulgent dessert-box look.

8. Pipe whipped topping swirls around the edges instead of covering the entire top.

9. Add heavy rainbow sprinkle coverage in the center.

10. Finish with light white chocolate drizzle and optional birthday cake cookie chunks.

11. Chill for at least 2 hours until cold, thick, creamy, and fluffy.
