Ingredients
2 cups rolled oats, blended into flour (or oat flour)
1½ tsp baking powder
1 tsp baking soda
½ tsp salt
2 tsp cinnamon
¼ tsp nutmeg
3 large eggs
⅓ cup melted coconut oil or light olive oil
⅔ cup unsweetened applesauce
2 medium carrots, finely grated
1 apple, peeled and grated
1 tsp vanilla extract
Optional: 2 tbsp chopped walnuts or raisins (adds points)
Instructions
Preheat oven to 350°F (175°C).
Mix oat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another bowl, whisk eggs, oil, applesauce, and vanilla.
Fold in grated carrots and apple.
Combine wet and dry ingredients until just mixed.
Pour into a greased 9-inch cake pan.
Bake 35–45 minutes until a toothpick comes out clean.
Cool and slice into 8 pieces.
