This is basically a simple, high-protein comfort dinner using just a few ingredients—but still super filling and flavorful.


🧾 Ingredients (Serves 4)

  • 4 large potatoes (russet or sweet potatoes)
  • 1 lb (450g) lean ground beef or turkey
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup shredded cheese (cheddar or mozzarella)

1. Cook the Potatoes 🥔

  • Wash potatoes and poke holes with a fork.
  • Bake at 400°F (200°C) for 45–60 minutes until soft
    (or microwave 8–10 minutes for faster option)
  • Let cool slightly, then cut in half and scoop out a little center.

2. Cook the Filling 🥩
