- 4 large potatoes (russet or sweet potatoes)
- 1 lb (450g) lean ground beef or turkey
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup shredded cheese (cheddar or mozzarella)

1. Cook the Potatoes 🥔
- Wash potatoes and poke holes with a fork.
